1. Formation: Preheat and Prepare
Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving some overhang on two opposite sides. This will act as “handles” to easily lift the brownies out later. Lightly grease the parchment for good measure.
2. Combine the Wet Ingredients
In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until well combined and no lumps remain. The mixture will look like a thick paste.
3. Add Eggs and Flavor
Whisk in the egg, egg yolk, and vanilla extract until the mixture is smooth, glossy, and lightens in color slightly. This should take about a minute.
4. Incorporate the Bananas
Switch to a spatula and gently fold in the mashed bananas until they are evenly distributed throughout the batter. Don’t overmix here; just fold until combined.
5. Sift and Combine Dry Ingredients
In a separate, small bowl, sift together the flour, cocoa powder, baking soda, and salt. Sifting is important for the cocoa powder to remove any lumps.
6. Bring it All Together
Gradually add the dry ingredients to the wet ingredients. Using your spatula, gently fold together until just a few streaks of flour remain. Be careful not to overmix, as this can make the brownies tough.
7. The Star Addition
Gently fold in 1 cup of chocolate chips. The residual heat from the batter will help them start to melt slightly, creating pockets of chocolatey goodness throughout.
8. The Final Bake
Pour the batter into your prepared pan and spread it evenly. Sprinkle the extra handful of chocolate chips on top for a beautiful, melty crust. Bake for 25-30 minutes.
9. The Toothpick Test
The brownies are done when the edges are set and pulling away from the pan slightly. A toothpick inserted into the center should come out with a few moist crumbs attached, but not wet batter. If it comes out clean, they are overbaked!
10. Cooling for Perfection
Place the pan on a wire rack and allow the brownies to cool completely in the pan. This is crucial for them to set properly. Once cool, use the parchment handles to lift the entire block out onto a cutting board. Slice into 16 squares with a sharp knife.
