Gluten-Free 3-Ingredient Lemon Cake

1. Preheat the oven
Preheat your oven to 350°F (175°C). Lightly grease a loaf pan (8×4 or 9×5 inches) or line it with parchment paper for easy removal.

2. Mix the batter
In a large mixing bowl, combine the gluten-free lemon cake mix, Greek yogurt, and eggs. Stir everything together until smooth and fully incorporated, about 1–2 minutes. The batter will be thick and creamy.

3. Bake
Pour the batter evenly into the prepared loaf pan and smooth the top. Bake for 35–40 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out clean.

4. Cool and serve
Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice into eight servings and enjoy as is, or add a light dusting of powdered sugar or a simple lemon glaze for extra sweetness.
