Strawberry Orange Chia Seed Pudding

Strawberry Orange Chia Seed Pudding is a bright, refreshing, and nutrient-rich breakfast or snack. This simple recipe combines the creamy texture of chia seeds with the fresh citrus flavor of orange juice and the natural sweetness of strawberries.

When chia seeds are mixed with liquid, they absorb moisture and expand, creating a thick and smooth pudding-like consistency. After chilling for several hours, the mixture transforms into a satisfying and nutritious dish.

This pudding is especially popular for meal preparation, since it can be made ahead of time and stored in the refrigerator for several days.

Ingredients

  • 1 ¼ cups orange juice (preferably 100% juice)

  • 1 cup Greek yogurt (plain, coconut, or vanilla)

  • ½ cup chia seeds

  • 1 cup fresh strawberries, hulled and chopped or mashed

  • 1 tablespoon maple syrup or honey (optional)

  • ½ teaspoon vanilla extract (optional)

Instructions

  1. In a large bowl or storage jar, mash the strawberries slightly to release their juices.

  2. Add the orange juice, Greek yogurt, vanilla extract, and sweetener if desired.

  3. Whisk the mixture until smooth and evenly combined.

  4. Stir in the chia seeds thoroughly, making sure they are evenly distributed and fully submerged in the liquid.

  5. Let the mixture sit for 5–10 minutes, then stir again to prevent the seeds from clumping together.

  6. Cover the container and refrigerate for at least 4 hours, preferably overnight, so the pudding can fully thicken.

  7. Before serving, stir the pudding once more and add your favorite toppings if desired.
