Slow Cooker Cabbage and Bacon
This recipe mimics a traditional Irish “Bacon and Cabbage” meal. In Ireland, “bacon” often refers to a cured back joint (boiling bacon), but thick-cut slab bacon or pancetta provides that same smoky, savory fat that seasons the cabbage as it softens.
Ingredients
-
1 medium head of green cabbage: Cut into thick wedges, leaving the core partially intact to prevent them from falling apart.
-
1 lb thick-cut slab bacon or salt pork: Sliced into 1 to 2-inch chunks.
-
1 cup water or chicken stock: Just enough to create steam without drowning the ingredients.
