Instructions:
1. Prepare the Peanut Butter Filling:
– In a large mixing bowl, combine the peanut butter, softened butter, powdered sugar, vanilla extract, and a pinch of salt (if desired).
– Mix everything together until smooth and well-combined. You may want to use a hand mixer or stand mixer for ease.
– Once the mixture is fully combined, cover the bowl with plastic wrap and refrigerate for at least 30 minutes. This will make it easier to roll the mixture into truffle-sized balls.
2. Shape the Truffles:
– After the peanut butter mixture has chilled, scoop out about 1 to 1.5 tablespoons of the mixture at a time. Roll it into a ball between your palms. If the mixture is too sticky, you can lightly grease your hands with a little bit of vegetable oil or coat them with powdered sugar.
– Place the rolled peanut butter balls on a parchment-lined baking sheet or tray.
– Continue until all the peanut butter mixture is used up. You should get about 18-20 truffles, depending on the size you make them.
3. Chill Again:
– Place the tray of peanut butter balls in the refrigerator again for about 15-20 minutes to firm up before coating them with chocolate.
4. Prepare the Chocolate Coating:
– In a microwave-safe bowl, combine the chopped chocolate and coconut oil (or vegetable oil). Microwave in 20-30 second intervals, stirring in between, until the chocolate is completely melted and smooth.
– Alternatively, you can melt the chocolate and oil using a double boiler on the stovetop.
5. Coat the Peanut Butter Balls:
– Once the peanut butter balls are firm, dip each one into the melted chocolate, covering it completely. Use a fork or a toothpick to help you dip and remove the balls from the chocolate, allowing any excess chocolate to drip off.
– Place the coated truffles back on the parchment paper.
6. Optional Garnishes:
– While the chocolate is still soft, you can sprinkle the truffles with a pinch of chopped peanuts or a sprinkle of sea salt for added texture and flavor.
7. Chill and Set:
– Place the coated truffles back in the fridge for about 30 minutes to allow the chocolate to set and harden.
8. Serve and Enjoy:
– Once the chocolate coating is fully set, your decadent chocolate peanut butter truffles are ready to enjoy!
– Store them in an airtight container in the refrigerator for up to a week, or freeze them for longer storage.
Tips:
– For a smoother chocolate coating, you can add a little more coconut oil or vegetable oil while melting the chocolate.
– If you prefer milk chocolate over dark chocolate, feel free to use it for the coating, but the truffles will be sweeter.
– You can also drizzle some melted white chocolate over the set truffles for a beautiful contrast in flavor and appearance.
Enjoy these rich and indulgent treats!
