Creamy, Peppery Coleslaw with Cucumbers & Celery

Instructions

1. Combine Vegetables: In a large bowl, mix together the shredded cabbage, cucumbers, celery, and grated carrots.

2. Make the Dressing: In a small bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, sugar, black pepper, and salt until smooth.

3. Mix & Chill: Pour the dressing over the vegetable mixture and toss until evenly coated. Stir in chopped parsley for freshness.

4. Refrigerate: Cover and chill for at least 1 hour to let the flavors meld.

5. Serve: Give the coleslaw a good stir before serving and adjust seasoning if needed.
