Combine: In a heavy-bottomed saucepan, stir together the milk, rice, and sugar.

Simmer: Place the pan over medium heat until it just reaches a boil. Immediately turn the heat down to the lowest setting.

Cook: Cover the pan with a tight-fitting lid and let it simmer for about 20–25 minutes. Do not peek too often! You want the rice to absorb the milk until it’s tender and the mixture has thickened into a porridge-like consistency.

The “Cozy” Finish: For that authentic Amish look shown in your photo, pour the mixture into a small oven-safe crock or ramekin. If you have an oven handy, pop it under the broiler for 1–2 minutes to get those toasted brown spots on top.

Serve: Dust with a little powdered sugar or cinnamon (if you have them in the pantry) and enjoy it warm.
Pro Tip: If the pudding looks too thick after 20 minutes, splash in another tablespoon of milk. It will continue to thicken as it cools!
