This recipe is called ‘Minister’s Delight’ and I swear tasting it feels like divine intervention!.

INSTRUCTIONS:

Brown the Beef: Heat olive oil in a large skillet over medium-high heat. Add the cubed beef stew meat in batches and cook until browned on all sides. Transfer the browned beef to the slow cooker.
Sauté the Aromatics: In the same skillet, add diced onion and minced garlic. Sauté for 2-3 minutes, or until softened and fragrant. Transfer the onions and garlic to the slow cooker.
Add the Vegetables: To the slow cooker, add sliced carrots, sliced celery, and halved baby potatoes.
Season and Add Liquids: Sprinkle dried thyme, dried rosemary, salt, and pepper over the ingredients in the slow cooker. Pour in diced tomatoes (with their juices), beef broth, and tomato paste.
Mix and Cook: Stir everything together in the slow cooker until well combined. Cover with the lid and cook on low heat for 7-8 hours or on high heat for 4-5 hours, until the beef is tender and the vegetables are cooked through.
Serve: Once the Slow Cooker Minister’s Delight is cooked to perfection, taste and adjust seasoning if needed. Ladle the hearty stew into bowls and garnish with chopped fresh parsley, if desired. Serve hot and enjoy the comforting flavors of this soul-warming dish.
