Seared Salmon Sushi Bake

Preheat your oven to 400°F (200°C). Cook the sushi rice according to package instructions.
In a small bowl, mix the rice vinegar, sugar, and salt. Pour the mixture over the cooked rice and stir to combine. Spread the rice in an even layer in a baking dish.
In a medium bowl, combine the soy sauce, mirin, sake, and brown sugar. Set aside.
Heat the vegetable oil in a skillet over medium-high heat. Sear the salmon fillet for 2-3 minutes per side until golden brown. Remove from heat and let it cool slightly. Flake the salmon into bite-sized pieces.
Arrange the flaked salmon over the sushi rice in the baking dish. Pour the soy sauce mixture evenly over the salmon.
In a small bowl, mix the mayonnaise and sriracha. Drizzle the spicy mayo over the salmon.
Bake in the preheated oven for 10-12 minutes until the top is slightly browned and bubbly.
Remove from the oven and top with sliced avocado, chopped green onions, sesame seeds, and nori strips.
Serve warm and enjoy!
