Rustic Beef Stew

Instructions:
1. In a large bowl, combine the flour, salt, and pepper. Toss the beef stew meat in the flour mixture until evenly coated.
2. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the coated beef and brown it on all sides. Remove the beef from the pot and set it aside.
3. In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent and the garlic becomes fragrant.
4. Add the carrots, potatoes, and celery to the pot. Stir and cook for a few minutes until the vegetables start to soften.
5. Return the browned beef to the pot, along with any juices that may have accumulated. Pour in the beef broth and red wine (if using). Stir in the tomato paste, dried thyme, and bay leaves.
6. Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for about 2 hours, or until the beef is tender and the flavors have melded together. Stir occasionally and check the liquid level to make sure it doesn’t get too dry. If needed, add more broth or water.
7. Once the stew is done, remove the bay leaves and discard them. Taste and adjust the seasoning with salt and pepper if necessary.
8. Serve the Rustic Beef Stew hot, garnished with chopped fresh parsley if desired. It pairs well with crusty bread or rice.
