Poor Man’s Stew

The Instructions

  1. Brown the Beef: In a large skillet over medium-high heat, brown the ground beef with the diced onions and garlic until the meat is no longer pink. Drain off the excess fat.

  2. Layer the Crockpot: Place your cubed potatoes and sliced carrots into the bottom of the slow cooker.

  3. Add the Meat: Spread the cooked beef and onion mixture over the vegetables.

  4. Make the Sauce: In a small bowl, whisk together the tomato soup, water (or broth), Worcestershire sauce, and seasonings. Pour this mixture over everything in the slow cooker.

  5. Slow Cook: Cover and cook on Low for 7-8 hours or on High for 4 hours. You’ll know it’s done when the potatoes and carrots are fork-tender and the sauce has thickened into a rich gravy.

  6. The Finish: Give it a gentle stir before serving. If it’s too thick, add a splash of water; if you want it heartier, serve it over a slice of buttered bread.

A Quick Tip for Extra “Wealth”

If you want to level this up even further, toss in a handful of frozen peas during the last 30 minutes of cooking for a pop of color and sweetness!
