My Mexican friend showed me this recipe. Delicious! To die for!

Even on the busiest weeknights, a bowl of Mexican Tater Tot Casserole will make you feel warm and fuzzy inside. The savory, crunchy potato tots and the spicy, strong tastes of Mexican food come together in this dish. If you’re looking for a filling dinner that won’t need slaving away in the kitchen, this is the way to go. Also, it’s great for family meals or informal gatherings as it’s enjoyed by both children and adults.
A crisp side salad and a tangy salsa or guacamole go well with this dish. With a side of cheesy jalapeño cornbread, it becomes a tempting combo if you’re in the mood for some additional indulgence. If you’re looking for a lighter alternative that complements the casserole’s deep tastes, steamed vegetables or charro beans are perfect.
