Creamy Crockpot Tortellini

Brown sausage and onion in a skillet until no pink remains. Drain any excess fat.
Transfer the cooked sausage and onion to a 6qt slow cooker.
Add frozen spinach, diced tomatoes with juice, cubed cream cheese, Italian seasoning, frozen tortellini, chicken broth, and tomato paste to the slow cooker.
Stir to combine all ingredients.
Cook on low for 2 ½ to 3 ½ hours. Check the tortellini at 2 ½ hours to ensure it doesn’t overcook.
Once the tortellini is cooked through, stir the mixture until the sauce becomes smooth and creamy.
Serve hot, garnished with parmesan cheese if desired.
