Cracker Barrel Meatloaf

Instructions:

Preparing the Meatloaf:

Preheat your oven to 350°F (175°C).

In a large bowl, combine the ground beef, eggs, diced onions, milk, crushed crackers (or breadcrumbs), salt, pepper, and dried thyme or sage if using. Mix until just combined, being careful not to overmix to keep the meatloaf tender.

Form the mixture into a loaf shape and place it in a lightly greased loaf pan or baking dish. Some prefer shaping the loaf and placing it on a lined baking sheet for a firmer crust around the edges.

Making the Topping:

In a small bowl, mix together the ketchup, brown sugar, and mustard until well combined.

Spread half of the topping over the meatloaf before baking. Reserve the other half for serving or to add a fresh layer of glaze during the last 15 minutes of baking for extra flavor.

Baking the Meatloaf:

Bake in the preheated oven for about 1 hour to 1 hour and 15 minutes, or until the meatloaf is cooked through. The internal temperature should reach 160°F (71°C) when checked with a meat thermometer.

If you reserved some of the topping, spread the remaining glaze over the meatloaf during the last 15 minutes of baking.

Once done, remove from the oven and let it rest for about 10 minutes before slicing. This rest period allows the juices to redistribute, making the meatloaf moist.

Serving:

Slice the meatloaf and serve it warm. For an authentic Cracker Barrel experience, pair it with sides like mashed potatoes, green beans, or macaroni and cheese.

Tips for Success:

Breadcrumbs vs. Crackers: While saltine crackers are traditional, breadcrumbs can be used as a substitute. The crackers tend to absorb moisture, helping to bind the meatloaf and keep it moist.

Mixing: Use your hands for mixing to ensure the ingredients are well incorporated without overworking the meat, which can make the meatloaf tough.

Cooking Time: Oven temperatures can vary, so it’s essential to check the meatloaf’s internal temperature to ensure it’s fully cooked.
