Broccoli and Cheddar Twice-Baked Potatoes

Preheat the oven to 400°F (200°C).
Wash and dry the potatoes, then poke several times with a fork.
Brush the potatoes with olive oil and bake for 45-60 minutes or until tender.
When the potatoes are cool enough to handle, slice them in half lengthwise.
Scoop out the potato flesh, leaving about 1/4 inch on the skins.
In a large bowl, mash the potato flesh with the cooked broccoli, soft butter, buttermilk, Greek yogurt, and half of the cheddar cheese.
Stir in the chives, dill, garlic powder, onion flakes, onion powder, paprika, pepper, and salt.
Spoon the mixture back into the potato skins.
Sprinkle the remaining cheddar cheese on top.
Place the potatoes back on the baking sheet and bake for another 20-25 minutes or until the cheese is melted and the edges are crispy.
Serve hot. Enjoy!
