- Preheat Oven
Set oven to 375°F (190°C) and lightly grease a baking dish. - Season the Chicken
Place chicken in the dish and sprinkle with salt, pepper, garlic powder, and paprika. - Prepare the Pineapple Sauce
In a bowl, whisk together pineapple juice, soy sauce, brown sugar (or honey), ketchup, vinegar, garlic, and ginger (if using). - Add Pineapple
Scatter pineapple chunks over the chicken, then pour the sauce evenly on top. - Bake
Cover loosely with foil and bake for 20 minutes. Remove foil and bake another 10–15 minutes until chicken is fully cooked (internal temp 165°F / 74°C). - Thicken the Sauce (Optional)
Transfer the sauce to a small pan, stir in the cornstarch slurry, and simmer 1–2 minutes until thickened. Pour back over the chicken. - Serve
Garnish with green onions or sesame seeds. Serve hot with rice, noodles, or roasted vegetables.
