Instructions
1. Prepare the Crust
- In a food processor, blend the flour, salt, and sugar.
- Add the cold butter and pulse until the mixture has coarse, crumb-like texture.
- Slowly add the ice water a tablespoon at a time, pulsing until the dough just starts to come together.
- Turn the dough out onto a surface, knead it gently, then divide into two equal discs.
- Wrap the discs in plastic wrap and chill for at least 1 hour or overnight.
2. Preheat the Oven
Set your oven to 350°F (175°C) to warm up.
3. Roll Out the Dough
- On a lightly floured surface, roll one disc into a circle large enough for your pie dish.
- Gently place it into the dish, trimming excess dough and shaping the edges as you like.
4. Mix the Filling
- In a mixing bowl, whisk the eggs with the cream, milk, salt, and pepper until smooth.
- Fold in the chopped bacon and shredded cheddar cheese.
5. Assemble and Bake
- Pour the filling into the prepared crust.
- Bake for 45–50 minutes, or until the center is firm and the top is golden brown.
6. Cool and Enjoy
- Let the quiche cool for about 10–15 minutes before cutting.
- Serve warm or at room temperature — delicious either way!
